En el restaurante en Segovia

The man presenting us with the cochinillo is the grandson of Cándido. The pig is so tender that it can be cut with nothing more than a plate. Legend has it that the tradition of tossing a plate started years ago when Cándido was cutting a pig at a wedding party. His fingers were greasy and the plate slipped and broke on the floor. But the people loved it, and ever since then, in Segovia people throw a plate on the ground at weddings.
